Oven-Baked Cheesy Sausage and Potato Bake
This Oven-Baked Cheesy Sausage and Potato Bake is a rustic, no-fuss sheet-pan dinner that delivers big comfort with minimal effort. Roasting at high heat allows the potatoes to turn golden and crisp while the sausage caramelizes beautifully. Giving the potatoes a head start ensures they become perfectly tender without overcooking the sausage. A blanket of melted cheddar brings everything together, complementing the earthy thyme and savory, smoky sausage.
Ingredients
Base
- 2 lbs potatoes, peeled and cubed
- 1 lb sausage (any variety you like), sliced
- 1 tbsp olive oil
Seasoning & Finish
- 1 cup shredded cheddar cheese
- 1 tsp dried thyme
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Directions
Step 1: Prepare the Potatoes
Preheat the oven to 400°F (205°C). In a large bowl, toss the cubed potatoes with olive oil, thyme, salt, and black pepper until evenly coated.
Step 2: First Roast
Spread the potatoes in a single layer on a rimmed sheet pan or baking dish. Roast for 20 minutes, until the edges begin to turn golden.
Step 3: Add the Sausage
Remove the pan from the oven and scatter the sliced sausage over the potatoes. Stir gently so the potatoes pick up the flavorful sausage drippings.
Step 4: Finish Roasting
Return to the oven and bake for another 20–25 minutes, until the sausage is browned and the potatoes are fork-tender.
Step 5: Add the Cheese
Sprinkle the shredded cheddar evenly over the top. Bake for an additional 5–7 minutes, until the cheese is fully melted and bubbling.
Step 6: Serve
Let the dish rest for 2–3 minutes before serving. Garnish with fresh parsley and enjoy hot.
