🛒 Ingredients
- Lean ground beef — 1 lb (freshly ground for best flavor)
- Olive oil — 1 tbsp (extra virgin preferred)
- Red onion — 1 medium, finely chopped
- Garlic — 2 cloves, minced
- Taco seasoning — ¼ cup (good-quality blend)
- Flour tortillas — 12 (6-inch)
- Salsa — 24 oz (store-bought or homemade)
- Sour cream — 1 cup
- Mexican cheese blend — 3 cups, shredded (freshly grated if possible)
- Water — ½ cup (adjust as needed)
- Green chiles — 1 can (optional)
- Black beans — 1 can, drained

Preheat the Oven
Set the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
Brown the Beef
In a large skillet over medium-high heat, cook the ground beef until browned. Drain excess fat and set aside.
Cook the Aromatics
Using the same skillet, heat the olive oil. Sauté the onion until softened, then add the garlic and cook for about 1 minute until fragrant.
Prepare the Filling
Return the beef to the skillet. Stir in taco seasoning, green chiles (if using), and black beans. Add water and simmer until the mixture thickens slightly, adding more liquid if needed.
Assemble the Lasagna
Arrange tortillas in the bottom of the baking dish. Spread a layer of salsa, followed by half of the beef mixture. Add half of the sour cream and sprinkle with cheese.
Repeat the layers. Finish with tortillas, the remaining salsa, and a generous layer of cheese.
Bake
Bake uncovered for 30–40 minutes, until the cheese is melted, bubbly, and lightly golden.
Serve
Let rest for 5 minutes before slicing. Garnish with fresh cilantro or parsley if desired.
