Ingredients
| Ingredient | Amount |
|---|---|
| Baby red or yellow potatoes, halved | 1½ lbs |
| Italian chicken sausages (sweet or mild) | 1 lb (4–5 links) |
| Yellow onion, cut into thick wedges | 1 large |
| Red bell pepper, sliced | 1 |
| Green bell pepper, sliced | 1 |
| Olive oil | 2 tablespoons |
| Kosher salt | 1 teaspoon |
| Freshly ground black pepper | ½ teaspoon |
| Dried Italian seasoning | 1 teaspoon |
| Garlic powder (or 2 minced cloves) | ½ teaspoon |
| Smoked or sweet paprika | ½ teaspoon |
| Grated Parmesan cheese (optional) | ½ tablespoon |
| Fresh parsley, chopped (optional) | For garnish |
Instructions
Step 1: Prepare the Pan
Preheat the oven to 400°F. Line a large sheet pan with parchment paper or lightly coat it with oil. Cut the potatoes into evenly sized halves or quarters to ensure they roast at the same rate.
Step 2: Season the Vegetables
In a large mixing bowl, combine the potatoes, onion wedges, and bell peppers. Drizzle with olive oil and sprinkle with salt, pepper, Italian seasoning, garlic powder, and paprika. Toss until everything is evenly coated.
Step 3: Arrange for Roasting
Spread the vegetables out in a single layer on the sheet pan. Tuck the sausage links in among the vegetables.
Tip: If the sausages are especially thick, prick them once or twice to prevent splitting.
Step 4: Roast
Roast in the oven for 25 minutes.
Step 5: Turn and Continue Cooking
Remove the pan from the oven, flip the sausages, and stir the vegetables for even browning. Return to the oven for another 15–20 minutes, until the potatoes are tender and the sausages reach an internal temperature of 165°F.
Step 6: Broil and Serve
For added color, broil for 2–3 minutes, keeping a close eye on the pan. Finish with a sprinkle of Parmesan and fresh parsley. Serve the sausages whole or sliced.
