Ingredients
- 2 pounds pork belly, skin on (cut into 1-inch cubes)
- 2 tsp kosher salt
- 1 tsp black pepper
Directions
Step 1: Preheat
Preheat the oven to 425°F (220°C). Place a sturdy glass baking dish inside the oven as it heats.
Step 2: Prepare the Pork
Use paper towels to pat the pork belly pieces very dry—this helps the skin crisp up during cooking.
Step 3: Season
Toss the pork cubes with salt and pepper until evenly coated on all sides.
Step 4: Arrange
Carefully take the hot baking dish out of the oven. Arrange the pork pieces in a single layer, skin side up, leaving a little space between each piece.
Step 5: Roast
Bake for 25–30 minutes, until the fat begins to render and the meat starts to brown.
Increase the oven temperature to 450°F (230°C) and continue roasting for another 15–25 minutes, until the skin turns crisp and golden. Rotate the pan if needed for even browning.
