Rice Krispie Chocolate Chip Cookies

This recipe puts a playful spin on traditional chocolate chip cookies by incorporating rolled oats and crispy rice cereal, creating a delicious balance of chewy and crunchy textures in every bite.
Rice Krispie Chocolate Chip Cookies
Ingredients:
- 1 cup butter, softened
- 1 cup brown sugar
- 1 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups rolled oats
- 2 cups Rice Krispie cereal
- 1–2 cups semi-sweet chocolate chips
Instructions:
Step 1: Prepare the Oven
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2: Combine Dry Ingredients
In a bowl, whisk together the flour, baking powder, and baking soda. Set aside.
Step 3: Cream Butter and Sugars
In a large mixing bowl, beat the butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 2–3 minutes.
Step 4: Incorporate Eggs and Vanilla
Add the eggs and vanilla extract, mixing until smooth and well blended.
Step 5: Mix Wet and Dry Ingredients
Gradually stir the dry ingredients into the wet mixture until just combined.
Step 6: Stir in Add-Ins
Gently fold in the oats, Rice Krispie cereal, and chocolate chips until evenly distributed throughout the dough.
Step 7: Portion and Bake
Scoop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake for 9–10 minutes, or until the edges turn lightly golden.
Step 8: Cool and Enjoy
