4-Ingredient Honey Mustard Pork Roast

Ingredients
- 3–4 lb boneless pork shoulder or pork loin roast, trimmed
- ½ cup honey
- ½ cup Dijon mustard (or yellow mustard for a milder flavor)
- 1½–2 teaspoons kosher salt
Instructions
1. Prep the pork
Pat the pork dry and place it into a 5–7 quart slow cooker.
2. Mix the sauce
In a bowl, whisk together the honey, mustard, and salt until smooth.
3. Coat the meat
Pour the sauce over the pork, turning it to coat evenly. If there is a fat side, place it facing up.
4. Cook
Cover and cook on LOW for 7–9 hours or HIGH for 3½–4½ hours, until the pork is very tender and easy to pull apart.
5. Rest and cut
Remove the pork to a cutting board and let it rest for about 10 minutes before slicing or shredding.
6. Adjust the sauce
Skim excess fat from the cooking liquid. For a thicker consistency, cook it uncovered on HIGH for 10–15 minutes.
7. Serve
Return the pork to the sauce or spoon the thickened glaze over the top before serving.
