Glazed Coconut Loaf

This sweet coconut loaf is the kind of dessert you often see at warm-weather gatherings—picnics, potlucks, and casual celebrations. It’s easy to make, comforting, and always popular. Mixed in one bowl with coconut, butter, and milk, it bakes into a soft, tender loaf with a bit of texture. A light coconut glaze poured over the top adds extra moisture and sweetness, making every slice especially appealing.

Serve it sliced with coffee, tea, or a chilled glass of milk. It also pairs well with fresh fruit like berries or pineapple, and can be cut into smaller portions for easy sharing.

Glazed Coconut Loaf

Ingredients

  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • ½ cup unsalted butter, melted and cooled
  • 2 large eggs (room temperature)
  • ¾ cup coconut milk
  • 1 teaspoon vanilla extract
  • 1¼ cups sweetened shredded coconut

Glaze

  • 1 cup powdered sugar
  • ¼ cup coconut milk
  • 1 tablespoon soft butter
  • ½ teaspoon vanilla extract

Instructions

1. Prepare the pan
Preheat the oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.

2. Combine dry ingredients
In a bowl, whisk together the flour, baking powder, and salt.

3. Mix wet ingredients
In a larger bowl, whisk the sugar and melted butter until smooth. Add the eggs one at a time, then mix in the coconut milk and vanilla.

4. Bring it together
Add the dry ingredients to the wet mixture and stir until just combined. Fold in the shredded coconut.

5. Bake
Pour the batter into the prepared pan and smooth the top. Bake for 45–55 minutes, until golden and a toothpick inserted in the center comes out with a few moist crumbs.

6. Prepare the glaze
Whisk together the powdered sugar, coconut milk, butter, and vanilla until smooth.

7. Glaze and cool
Let the loaf cool in the pan for about 15 minutes, then remove it. While still slightly warm, pour the glaze over the top. Allow it to cool completely before slicing.
