Garlic Butter Roast Beef Bites

These low-carb roast beef bites are the kind of appetizer my Aunt Mary always brought to weekend gatherings—simple, flavorful, and quick to disappear. Thin slices of deli roast beef wrapped around a creamy, herbed filling create a rich, savory bite that feels a bit special without much effort. They’re perfect for game days, movie nights, or anytime you need a fast, crowd-pleasing snack made from everyday ingredients.
Serve them chilled or slightly cool on a platter, with toothpicks for easy grabbing if you like. They pair nicely with crisp vegetables such as celery, cucumber, or bell pepper strips to balance the richness. For drinks, iced tea or sparkling water with lemon keeps things refreshing, while a dry red wine works well for an adult option. If you’re hosting, add a simple green salad or a tray of cheese and nuts to round out the spread while keeping it low carb.
Herbed Cream Cheese Roast Beef Bites

8 oz deli roast beef, thinly sliced
8 oz cream cheese, softened
2 tbsp fresh herbs (such as parsley or chives), finely chopped, plus extra for garnish

Roll each slice tightly into a log and place seam-side down. Repeat with the remaining slices. - Chill
Refrigerate the rolls for 20–30 minutes to help them firm up. - Slice
Cut into bite-sized pieces, about 1 to 1½ inches thick. - Serve
Arrange cut-side up on a platter and garnish with extra herbs if desired. Add toothpicks just before serving.
