Homemade Kilted Sausage Bites

Smoky, savory, and slightly sweet—these bite-sized bacon-wrapped snacks are the definition of comfort food in a small package.
There’s something irresistible about one-bite appetizers, especially when they come out of the oven hot with crisp bacon wrapped around them. Kilted Sausage Bites are a classic favorite that tend to vanish quickly. The combination of juicy sausage, smoky bacon, and a caramelized sweet-and-savory coating delivers a rich flavor that feels both familiar and indulgent.
Many people discover these at family get-togethers or holiday celebrations, where they’re kept warm and ready to grab. Sometimes called “sausage in a blanket” or bacon-wrapped sausage bites, they’re almost always among the first dishes to disappear. Making them yourself is simple—and often tastes even better than store-bought or catered versions.
Whether for game day, festive gatherings, or just a craving for something sweet and salty, these bites offer big flavor with very little effort. Baked until crisp and caramelized, they’re easy to tweak and perfect to keep in your go-to recipe list.
Kilted Sausage Bites
Ingredients
- 1 lb smoked sausage or kielbasa, cut into bite-sized pieces
- 1 lb bacon, cut into thirds
- 1 cup brown sugar
- ½ tsp black pepper
- ¼ tsp garlic powder (optional)
- Toothpicks (for securing)
Instructions
1. Preheat the oven
Heat your oven to 375°F (190°C). Line a baking sheet with foil and place a wire rack on top, or lightly grease a baking dish.
2. Wrap the sausage pieces
Take each piece of sausage, wrap it with a strip of bacon, and secure it with a toothpick.
3. Add the coating
In a bowl, combine the brown sugar, black pepper, and garlic powder. Roll each bacon-wrapped piece in the mixture until fully coated.
4. Prepare for baking
Arrange the pieces seam-side down on the baking sheet or dish, leaving a bit of space between them.
5. Bake until done
Bake for 30–35 minutes, turning once halfway through, until the bacon is crispy and the sugar has melted into a caramelized coating.
6. Serve warm
Let them cool slightly before serving. As they rest, the coating will thicken into a glossy glaze.
