Creamy Dutch Oven Chuck Roast

A simple, low-carb comfort dish made with just six ingredients
This recipe is all about easy, cozy cooking with minimal effort. Season a chuck roast, pour over some heavy cream, add a few pantry staples, and let the Dutch oven do the work. As it slowly braises, the cream transforms into a rich, savory sauce that tastes like it took hours of hands-on effort—when in reality, the oven does most of it. It’s a classic comfort meal with a low-carb twist that feels both satisfying and impressive.
Serve it alongside cauliflower mash, sautéed green beans, or roasted broccoli to keep things low in carbs while enjoying the creamy sauce. A crisp salad with a light vinaigrette can help balance the richness. If carbs aren’t a concern, mashed potatoes or buttered egg noodles pair beautifully. Creamy Dutch Oven Chuck Roast
Ingredients
- 3–3.5 lb boneless beef chuck roast
- 2 tsp kosher salt
- 1 tsp freshly ground black pepper
- 1 tsp garlic powder
- 1 tsp dried Italian seasoning (or oregano)
- 2 tbsp olive oil
- 2 cups heavy cream
Directions
Preheat the oven
Set the oven to 325°F (165°C). Place a 5–6 quart Dutch oven over medium-high heat on the stovetop.
Season the meat
Pat the roast dry, then evenly rub it with salt, pepper, garlic powder, and dried herbs, pressing the seasoning into the surface.
Sear the roast
Add olive oil to the heated pot. Once hot, sear the roast for about 3–4 minutes on each side until a deep, golden-brown crust forms.
Add the cream
Remove the pot from heat and pour the heavy cream over and around the roast, covering it mostly.
Braise slowly
Cover and transfer to the oven. Cook for 2½ to 3 hours, or until the meat is tender enough to pull apart easily (larger roasts may take up to 3½ hours).
Shred and combine
Remove from the oven, shred the meat directly in the pot, and stir it into the creamy sauce. Taste and adjust seasoning if needed.
Optional step
For a thicker sauce, simmer uncovered on the stovetop for 5–10 minutes.
Serve
Serve hot with plenty of the creamy sauce over your choice of sides.
