Slow Cooker 3-Ingredient Chicken and Onions

Ingredients:

  • 3–3½ lbs chicken pieces (bone-in, legs or thighs)
  • 3 large yellow onions, thinly sliced
  • 1 tbsp kosher salt, divided

Instructions:

Step 1: Create the Base
Spread one-third of the sliced onions across the bottom of the slow cooker and lightly season with salt.

Tip: This base layer prevents sticking and builds flavor as the dish cooks.

Step 2: Build the Layers
Pat the chicken dry, then place half of the pieces over the onions, skin-side up. Sprinkle with some salt. Add another layer of onions, then the remaining chicken and salt, finishing with the rest of the onions on top.
