3-Ingredient Sriracha Mayo Roasted Potatoes

These spicy potato wedges are a great example of how a few simple ingredients can turn into a flavorful, satisfying dish. Coated in creamy mayonnaise and bold sriracha, the potatoes roast until crisp and golden on the outside while staying soft and fluffy inside. Serve them hot with extra dipping sauce such as ranch, garlic mayo, or additional sriracha. They pair well with burgers, grilled chicken, pork chops, or sandwiches, and they’re also filling enough to enjoy on their own with a salad or fried egg.
3-Ingredient Sriracha Mayo Potato Wedges
Ingredients
- 2 lbs russet or Yukon gold potatoes, cut into wedges
- ⅓ cup mayonnaise
- 2–3 tbsp sriracha sauce
Directions
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Wash and dry the potatoes, then slice them into thick wedges.
In a large bowl, mix the mayonnaise and sriracha until smooth.
Add the potato wedges and toss until evenly coated.
Arrange the wedges in a single layer on the prepared baking sheet, leaving space between them for even roasting.
Bake for 20 minutes, then flip the wedges and continue baking for another 15–20 minutes until browned, crispy on the outside, and tender inside.
Let them cool slightly before serving warm with your preferred dipping sauce.
