3-Ingredient Bacon Meatball Bombs
Ingredients
| Ingredient | Amount |
|---|---|
| Frozen fully cooked beef meatballs | 1½ lbs (18–20 meatballs) |
| Thin-cut bacon | 1 lb (18–20 slices) |
| Sugar-free barbecue sauce | ½ cup, plus extra for serving |
Directions
Preheat the Oven
Heat the oven to 400°F (200°C). Line a rimmed baking sheet with aluminum foil. If available, place a wire rack on top of the baking sheet to help the bacon crisp evenly.
Prepare the Meatballs
If the meatballs are frozen solid, allow them to sit at room temperature for 10–15 minutes while the oven preheats.
Wrap with Bacon
Lay the bacon slices on a cutting board. If the slices are especially long, cut them in half. Wrap each meatball snugly with bacon and place it seam-side down on the prepared baking sheet.
Add the Barbecue Glaze
Using a pastry brush or spoon, coat the bacon-wrapped meatballs generously with the sugar-free barbecue sauce.
Bake
Bake for 25–30 minutes, or until the bacon is crisp, deeply golden, and the meatballs are heated through. If you’re not using a wire rack, carefully drain any excess grease halfway through cooking.
Optional Broiling Step
For extra color and caramelization, place the tray under the broiler for 2–3 minutes. Watch closely to prevent burning.
Rest and Serve
Allow the meatball bombs to rest for about 5 minutes after baking. This helps the bacon crisp further and makes them easier to handle.
Transfer to a serving platter or serve directly from the baking sheet. Provide toothpicks and extra barbecue sauce on the side for dipping.
