| Chicken broth | 8 cups |
| Water | 2 cups |
| Carrots, peeled and sliced | 2 medium |
| Celery stalks, sliced | 2 |
| Onion, diced | 1 medium |
| Garlic cloves, minced | 3 |
| Bay leaf | 1 |
| Dried thyme | 1 teaspoon |
| Dried parsley | 1 teaspoon |
| Salt and pepper | To taste |
| Egg noodles | 2 cups |
Instructions
Prepare the Chicken
Cut chicken breasts into bite-sized pieces if using. If using thighs, leave them whole or cut into chunks depending on preference.
Brown the Chicken
Heat a small amount of oil in a large pot or Dutch oven over medium heat. Add the chicken and cook for about 5 minutes, until lightly browned on all sides. Remove and set aside.
Sauté the Vegetables
In the same pot, add onion, garlic, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until the vegetables begin to soften.
Build the Broth
Pour in the chicken broth and water. Add the bay leaf, thyme, and parsley, then season with salt and pepper. Stir well, bring to a boil, then reduce to a gentle simmer. Let cook for about 20 minutes to develop flavor.
Cook the Noodles
While the soup simmers, cook the egg noodles separately according to package instructions. Drain and set aside to prevent them from becoming overly soft in the broth.
Finish the Soup
Return the chicken to the pot and simmer for another 10 minutes, or until fully cooked and tender. Remove and discard the bay leaf. Add the cooked noodles and stir to combine.
Serve
Taste and adjust seasoning if needed. Ladle the soup into bowls and serve hot.
