Used to eat these by the handful growing up! Now my grandkids do!

Baked Fish Sticks are a flavorful and lighter alternative to traditional fried versions, delivering a crispy coating and tender fish without the extra oil. Easy to prepare and family-friendly, they make a great snack, appetizer, or simple main dish. With a crunchy Parmesan-panko crust and flaky white fish inside, these homemade fish sticks are both satisfying and wholesome.
Ingredients
| Ingredient | Amount |
|---|---|
| Firm white fish (such as cod or tilapia), cut into strips | 1 lb |
| Panko breadcrumbs | 1 cup |
| Grated Parmesan cheese | ½ cup |
| Garlic powder | 1 teaspoon |
| Paprika | 1 teaspoon |
| Salt | ½ teaspoon |
| Black pepper | ¼ teaspoon |
| Large eggs | 2 |
| All-purpose flour | ¼ cup |
| Cooking spray or olive oil | As needed |
Instructions
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper and lightly coat it with cooking spray or a thin layer of olive oil.
- In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- In a separate bowl, whisk the eggs until well blended.
- Place the flour on a plate or in another shallow dish.
- Working one piece at a time, coat each fish strip in the flour, shaking off any excess.
- Dip the floured fish into the beaten eggs, ensuring it is fully covered.
- Roll the fish in the breadcrumb mixture, pressing gently so the coating adheres evenly.
- Arrange the coated fish strips on the prepared baking sheet, leaving space between each piece.
- Bake for 15–20 minutes, or until the coating is crisp and golden and the fish flakes easily when tested with a fork.
- Remove from the oven and allow to cool for a few minutes before serving.
- Serve warm with tartar sauce, lemon wedges, ketchup, or your favorite dipping sauce.
Tip: For extra crispiness, lightly spray the tops of the coated fish sticks with cooking spray before baking.
