3-Ingredient Ranch Chicken Bombs

These crispy ranch chicken bites are one of my favorite solutions when I need a simple appetizer or a protein-packed snack in a hurry. A close friend introduced me to them, claiming they’re always the first dish to disappear at parties and gatherings—and after trying them, I understood why. Tender chicken is combined with ranch seasoning and coated in a crunchy pork rind crust, creating a flavorful bite with a juicy interior and crisp, golden exterior. Best of all, they require just three ingredients and minimal prep time.

Serve them straight from the oven with ranch dressing, spicy mayo, or a low-carb barbecue sauce. They’re perfect for game-day spreads, party platters, or as an easy dinner paired with salad, roasted vegetables, or cauliflower mash. They also fit perfectly into meal-prep containers and make a satisfying high-protein snack when reheated.

Ground chicken1½ lb93–96% lean
Ranch seasoning mix2 (1 oz) packetsDivided
Plain pork rinds, finely crushed1 cup (about 2½ oz)Divided

Directions

Prepare the Baking Pan

Preheat the oven to 400°F (200°C). Lightly grease or line a rimmed baking sheet or casserole dish with parchment paper.

Combine the Chicken Mixture

In a large bowl, mix together the ground chicken, one packet of ranch seasoning, and ½ cup of the crushed pork rinds until thoroughly blended.

Prepare the Coating

In a shallow bowl, combine the remaining ½ cup crushed pork rinds with the remaining ranch seasoning packet.

Shape the Chicken Balls

Portion the mixture into 1½–2 tablespoon scoops, making approximately 18–22 meatballs. Roll each portion into a smooth, even ball.

Coat and Place

Roll each chicken ball in the seasoned pork rind coating, pressing lightly so the mixture adheres. Arrange them on the prepared baking sheet, leaving space between each piece.

Bake

Bake for 16–20 minutes, or until the coating is crisp and golden and the internal temperature reaches 165°F (74°C).

Optional Broiling Step

For an even crispier finish, place under the broiler for 1–2 minutes at the end of cooking. Monitor closely to prevent burning.

Cool and Serve

Allow the chicken bombs to rest for 5 minutes before serving. Enjoy warm with your favorite dipping sauces, or refrigerate leftovers in an airtight container for up to 3 days.
