🍲 Directions
- Toast the Pecans
Place pecans in a dry skillet over medium heat. Stir occasionally for 3–5 minutes until they become fragrant and lightly golden. Transfer to a plate and allow them to cool.
- Prepare the Baking Area
Line two baking sheets with parchment paper or silicone mats. Lightly grease if needed to make removal easier.
- Arrange the Nut Clusters
Place small groups of 3–4 pecan halves onto the prepared baking sheets, leaving space between each cluster.
- Cook the Caramel
In a saucepan over medium-high heat, melt the butter. Add brown sugar, corn syrup, and sweetened condensed milk. Stir continuously until the mixture is smooth and combined.
- Reach the Perfect Caramel Stage
Continue cooking until the caramel reaches 235–240°F (soft-ball stage) using a candy thermometer. If you don’t have one, cook until the mixture becomes thick, glossy, and slowly falls from the spoon.
- Add Flavor
Remove the caramel from the heat and mix in the vanilla extract. Allow it to sit for about 30 seconds so it thickens slightly.
- Coat the Pecans
Spoon approximately 1½ teaspoons of caramel over each pecan cluster, allowing the caramel to settle around the nuts.
- Melt the Chocolate
Combine the chocolate chips and shortening in a microwave-safe bowl. Heat in 30-second intervals, stirring between each, until the chocolate is completely smooth.
- Add the Chocolate Layer
Drizzle or spoon about 1½ teaspoons of melted chocolate over each caramel-covered pecan cluster. Create swirls or patterns for a decorative finish.
- Allow to Set
Let the clusters rest at room temperature for 20–30 minutes, or refrigerate them for 15–20 minutes until firm. Serve and enjoy!
