Skinny Meatloaf
Ingredients:
| Ingredient | Quantity |
|---|---|
| Extra-lean ground beef (96% lean) or tenderloin ground beef | 1 lb |
| Whole wheat bread, crust removed and shredded | 1 1/2 slices |
| Vidalia onion, finely diced | 1 cup |
| Egg whites | 3 large |
| Ketchup | 3 tbsp |
| Yellow mustard | 1 tbsp |
| Worcestershire sauce | 1 tbsp |
| Salt | 1 pinch |
| Black pepper | 1/2 tsp |
Step-by-Step Directions:
Prepare the Oven:
Preheat your oven to 350°F (175°C). Lightly coat an 8×4-inch loaf pan with nonstick cooking spray and set aside.
Combine the Ingredients:
In a large bowl, add the ground beef, shredded whole wheat bread, chopped onion, egg whites, ketchup, mustard, Worcestershire sauce, salt, and pepper.
Mix Carefully:
Use your hands or a fork to gently combine everything until the ingredients are evenly blended. Be careful not to overmix, as too much handling can make the meatloaf firm and dense.
Shape the Loaf:
Transfer the mixture into the prepared loaf pan. Press it gently into the pan, making sure it reaches the corners, then smooth the surface for an even shape.
Bake Until Done:
Place the loaf in the oven and bake for 45–55 minutes. The center should reach an internal temperature of 160°F (71°C) when checked with a meat thermometer.
Rest Before Cutting:
Remove the meatloaf from the oven and allow it to rest for 5–10 minutes. This helps the juices redistribute, keeping each slice moist and tender.
Serve:
Slice into thick portions and enjoy warm with roasted vegetables, lighter mashed potatoes, or a crisp side salad for a comforting meal.
