Quick and Easy Pan Fried Corn Fritters

These Quick and Easy Pan-Fried Corn Fritters are a delightful and versatile dish, perfect as a side, appetizer, or light meal. Packed with sweet corn, fresh cilantro, zesty jalapeño, and melted Monterey Jack cheese, they cook up golden and crispy in minutes.

Ingredients:

Instructions:

  1. Prepare Corn Mixture: In a large mixing bowl, combine the cornchopped cilantrochopped green oniondiced jalapeño, and fresh lime juice. Mix well until everything is combined. Set this mixture aside.
  2. Whisk Dry Ingredients: In a separate, smaller bowl, whisk together the all-purpose flourbaking powderkosher saltground black pepper, and chili powder.
  3. Combine Mixtures: Add the whisked dry ingredients to the corn mixture. Mix until just combined.
  4. Fold in Wet Ingredients and Cheese: Gently fold in the lightly beaten eggswhole milk, and shredded Monterey Jack cheese until everything is just incorporated. Be careful not to overmix.
  5. Heat Oil: Heat the olive oil in a medium-sized pan or skillet over medium-high heat until it’s hot. A hot pan is key to getting that beautiful golden crust on your fritters.
