- 2 cups (250g) self-rising flour
- 1/2 cup (1 stick) cold unsalted butter, cubed
- 1 cup (240ml) cold buttermilk
Instructions
Step 1: Preheat the oven
Set your oven to 450°F. The high heat is key—it helps the cold butter release steam quickly, allowing the biscuits to rise properly. Line a baking sheet with parchment paper.
Step 2: Incorporate the butter
Place the flour in a large bowl and add the cold, cubed butter. Use a pastry cutter, fork, or your hands to blend the butter into the flour.
Tip: The mixture should resemble coarse crumbs, with small pea-sized bits of butter still visible. These pieces are essential for a flaky texture.
Step 3: Mix in the buttermilk
Pour in the cold buttermilk and gently stir with a fork until just combined.
Important: Stop mixing as soon as the dough forms a rough, sticky mass. Overmixing can cause the butter to soften too soon, leading to heavier biscuits.
Step 4: Shape and bake
