Southern-Style Cheddar Corn Muffin Bites

These savory cheddar corn muffin bites put a fun, bite-sized spin on traditional Southern cornbread. With a tender crumb, buttery flavor, and plenty of melted cheddar throughout, they make an easy addition to almost any meal.

The batter comes together with basic pantry staples, making these mini muffins especially convenient when you need a quick side dish or appetizer. Serve them alongside barbecue, chili, soups, or simply enjoy them warm as a snack.

Ingredients

IngredientAmount
Cornmeal1 cup
All-purpose flour or gluten-free flour1 cup
Baking powder1 tablespoon
Salt1/2 teaspoon
Milk1 cup
Large egg1
Melted butter or vegetable oil1/4 cup
Shredded cheddar cheese1 cup

Directions

1. Get the Oven and Pan Ready

Preheat your oven to 400°F (200°C).

Lightly grease a mini muffin pan, or place paper liners into the muffin cups to make removing the baked bites easier.

2. Combine the Dry Ingredients

Add the cornmeal, flour, baking powder, and salt to a large mixing bowl.

Whisk everything together until the ingredients are thoroughly blended.

3. Mix the Wet Ingredients

Crack the egg into another bowl and beat it lightly.

Pour in the milk and melted butter, or vegetable oil if you prefer a lighter option. Whisk until the mixture is smooth and evenly combined.

4. Prepare the Batter

Pour the wet mixture into the bowl with the dry ingredients.

Using a spoon or spatula, gently stir everything together just until a batter forms and no large pockets of dry flour remain.

Helpful Tip: Be careful not to overwork the batter. Excessive stirring can make the finished corn muffins heavy and dense rather than soft and tender.

5. Stir in the Cheddar

Add the shredded cheddar cheese to the batter.

Fold it in gently until the cheese is spread evenly throughout the mixture.

6. Portion the Batter

Divide the batter among the prepared mini muffin cups, filling each one approximately two-thirds full.

This leaves enough room for the muffins to rise as they bake.

7. Bake Until Golden

Place the muffin tin in the preheated oven.

Bake for 12–15 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean.

8. Cool and Enjoy

Allow the baked muffin bites to rest in the pan for several minutes after removing them from the oven.

Then transfer them to a wire rack. Serve them warm or at room temperature.

These cheesy corn bites are especially tasty alongside barbecue, soups, chili, or other Southern-inspired dishes.
