Creamy Ranch–Style Potatoes

These Creamy Ranch Potatoes are an easy, no-fuss side dish that combines the bold flavor of ranch with the richness of cream cheese. Instead of being mashed, the potatoes are left in chunks and coated in a thick, savory sauce, giving them a comforting, casserole-style feel. Yukon Gold potatoes are especially ideal, as their naturally buttery texture holds up well during slow cooking without falling apart.

How to Make Creamy Ranch Potatoes
Step 1: Prep the potatoes
Clean and dry the potatoes well, then cut them into evenly sized quarters (or smaller pieces if they’re large). Spread them in an even layer in the bottom of the slow cooker.
Step 2: Make the sauce
In a medium bowl, combine the cream cheese, butter, chicken broth, ranch seasoning, chives, and black pepper. Stir or whisk until mostly blended.
Tip: If the mixture appears slightly uneven or lumpy, that’s okay—it will melt into a smooth, creamy sauce as it cooks.
Step 3: Add the sauce
Pour the ranch mixture over the potatoes. Use a spatula to gently spread it so the potatoes are mostly coated.
Step 4: Cook slowly
Cover and cook on Low for 4–5 hours or on High for 2–3 hours. The potatoes are ready when they are fork-tender. Keep the lid closed during cooking for best results.
Step 5: Stir and adjust seasoning
Once the potatoes are soft, gently toss them to evenly coat with the sauce. Taste before adding extra salt, since the ranch mix and broth already provide seasoning.
Step 6: Finish and serve
Sprinkle additional chives on top for a fresh touch and serve hot, either directly from the slow cooker or transferred to a serving dish.
