Bacon Cheese Bombs

These Bacon Cheese Bombs are the kind of appetizer that has everyone waiting near the oven for the first batch to come out. Thick-cut bacon wraps around cubes of melty white cheese, creating an irresistible combination of crisp, salty bacon and warm, gooey cheese. They’re made with just a few simple ingredients, yet they’re impressive enough to disappear quickly at family gatherings, parties, or game-day spreads.
Serve these bites hot and fresh from the foil-lined baking sheet while the cheese is still soft and melty. A crisp salad, fresh vegetable sticks, or cherry tomatoes make refreshing sides that balance the richness. For dipping, try low-carb options such as ranch, sugar-free barbecue sauce, or spicy mayo. They’re also great alongside sparkling water with lemon, a light beer, or as an easy movie-night snack.
Bacon Cheese Bombs
Ingredients
| Ingredient | Amount | Notes |
|---|---|---|
| Thick-cut bacon | 12 slices | Wraps the cheese |
| Mozzarella cheese (or low-moisture white cheese) | 8 oz block | Cut into 12 cubes |
| Garlic powder | 1 tsp | Seasoning |
Instructions
1. Preheat the Oven
Set the oven to 400°F (200°C). Line a rimmed baking sheet with foil. If available, place a wire rack over the sheet to help the bacon become even crispier.
2. Cut the Cheese
Use a paper towel to pat the cheese dry. Cut the block into 12 evenly sized cubes, approximately 1 inch each.
3. Season the Bacon
Arrange the bacon slices on a cutting board. If the slices are particularly long, cut each one in half. Sprinkle the garlic powder evenly over both sides of the bacon.
4. Wrap the Cheese
Place one cheese cube at the end of a bacon slice. Roll the bacon snugly around the cheese, making sure to tuck the ends underneath. Continue with the remaining bacon and cheese cubes.
5. Bake Until Crisp
Place each wrapped cheese cube seam-side down on the prepared baking sheet. Bake for 18–22 minutes, or until the bacon is golden brown and sizzling. For an extra-crispy finish, broil for 1–2 minutes at the end, watching carefully.
6. Rest and Serve
Allow the Bacon Cheese Bombs to rest for 3–5 minutes. This gives the melted cheese a moment to thicken slightly. Serve warm directly from the baking sheet or arrange them on a serving platter.
