Potato and Onion Bake

This Potato and Onion Bake is the kind of simple, comforting dish that never goes out of style. I love serving it directly from the slow cooker in shallow bowls, allowing the buttery juices to coat every tender slice. For a simple meal, pair it with crusty bread or cornbread to soak up the flavorful juices. When you want something heartier, use it as a base for a fried egg, leftover sausage, or even a scoop of cottage cheese. Potato and Onion Bake
Ingredients

Directions
1. Prepare the Slow Cooker
Generously or lightly coat the inside of a 4–6 quart slow cooker with butter to prevent the vegetables from sticking.
2. Slice the Potatoes and Onions
Scrub or peel the potatoes, then cut them into thin rounds. Peel the onions, slice them in half, and cut them into thin slices.
3. Build the Layers
Drizzle 1–2 teaspoons of the melted butter over the bottom of the slow cooker. Arrange a layer of sliced potatoes, followed by onions, then drizzle with more melted butter. Continue layering the potatoes and onions with butter until everything has been added. Finish by drizzling the remaining butter over the top.
4. Slow Cook
Cover the slow cooker and cook on LOW for 6–7 hours or on HIGH for 3–4 hours. The dish is ready when the potatoes are easily pierced with a fork and the onions are tender with lightly caramelized edges.
5. Let It Rest
Remove the lid and allow the bake to stand for 10 minutes. This gives the steam time to dissipate and allows the buttery juices to become slightly thicker.
6. Serve
Scoop through the layers when serving so that each portion includes both potatoes and onions. Finish each serving by spooning some of the buttery juices from the bottom of the slow cooker over the top.
