Buffalo Chicken Bites

The beauty lies in how simple they are: shredded chicken, bold buffalo sauce, a creamy binding, and sharp cheddar. Serve them straight from the oven while they’re still hot and bubbly, with celery and carrot sticks on the side for crunch. A bowl of ranch or blue cheese dressing is perfect for balancing the heat. They’re fantastic alongside other low-carb snacks like olives, nuts, or cheese cubes, and they also make a great protein-packed topping for a green salad. Buffalo Chicken Bites (4 Ingredients, Low Carb)
Ingredients
- Cooked shredded chicken – 2 cups (rotisserie or leftover roasted works well)
- Buffalo wing sauce – ½ cup (your preferred brand)
- Cream cheese – 4 oz, softened (half a block)
- Sharp cheddar cheese – 1½ cups, shredded (divided)
Directions
- Preheat the oven – Set it to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a casserole dish.
- Make the base – In a mixing bowl, stir together the softened cream cheese and buffalo sauce until the mixture is completely smooth and uniform.
- Add the chicken – Toss in the shredded chicken and stir well until every piece is evenly coated and takes on an orange hue throughout.
- Mix in the cheese – Fold in 1 cup of the shredded cheddar, setting aside the remaining ½ cup to use as a topping later.
- Form the bites – Scoop heaping tablespoons of the mixture onto your prepared baking sheet, leaving a little space between each mound.
- Top and bake – Sprinkle the reserved cheddar over the top of each bite. Bake for 15 to 20 minutes, until they’re sizzling, bubbly, and just starting to turn golden. For extra-crispy edges, let them go another 2 to 3 minutes.
- Rest and serve – Allow the bites to cool for about 5 minutes so they firm up slightly. Transfer them to a platter or serve straight from the dish, with your favorite dipping sauces on the side.
