3-Ingredient Oven-Roasted Autumn Comfort

This easy three-ingredient autumn side dish transforms raw baby purple potatoes into tender, golden bites with beautifully crisp, caramelized skins. The roasted potatoes are finished with a generous layer of shredded mozzarella, then baked again until the cheese is melted, smooth, and glossy. Simple, colorful, and comforting, it’s an effortless addition to any cozy fall meal.

Directions

1. Prepare the oven and potatoes
Set the oven to 400°F. Lightly grease a medium ceramic baking dish. If any of the potatoes are larger than bite-sized, cut them in half to help them cook evenly.

2. Coat with olive oil
Arrange the potatoes in the prepared baking dish. Drizzle the olive oil over them and toss well, making sure each potato is evenly coated.

3. Roast until tender
Place the dish in the oven and roast for 45–55 minutes. Stir the potatoes once halfway through cooking. Continue roasting until they can be easily pierced with a fork and the skins are browned and caramelized.

4. Add the mozzarella
Remove the potatoes from the oven and spread the shredded mozzarella evenly across the top. Return the dish to the oven and bake for another 5–8 minutes, or until the cheese has completely melted and looks glossy.

5. Rest and serve
Allow the potatoes to rest for about 5 minutes before serving. This gives the melted cheese a moment to settle while keeping the potatoes warm and tender.
