Mississippi Mud Cake Recipe

Mississippi Mud Cake
Mississippi Mud Cake is a decadent chocolate dessert with a soft, gooey center and a smooth, fudgy chocolate topping. Mini marshmallows are folded into the cake batter before baking, where they melt into the chocolate cake and add an extra layer of sweetness and texture to every slice.
Ingredients
| Ingredient | Quantity |
|---|---|
| All-purpose flour | 1 cup |
| Mini marshmallows | 1/2 cup |
| Confectioners’ sugar | 16 oz |
| Whole milk | 1/2 cup |
| Unsalted butter | 1/2 cup |
| Unsweetened cocoa powder | 1/4 cup |
| Vanilla extract | 1 teaspoon |
Instructions
1. Prepare the cake
Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan to prevent the cake from sticking.
In a bowl, combine the flour and mini marshmallows. Prepare your preferred chocolate cake batter, then gently fold the marshmallows into the batter until they are evenly distributed. Pour the mixture into the prepared baking pan.
2. Bake
Place the cake in the preheated oven and bake for 25–30 minutes, or until a toothpick inserted into the cake comes out clean. Remove from the oven and allow the cake to cool completely in the pan.
3. Make the icing
Add the confectioners’ sugar, whole milk, unsalted butter, and unsweetened cocoa powder to a saucepan. Cook over medium heat, stirring regularly, until the mixture becomes smooth and well combined. Remove the saucepan from the heat and stir in the vanilla extract.
4. Frost the cake
Once the cake has cooled completely, pour the warm chocolate icing evenly over the surface. Allow the icing to sit undisturbed for about 30 minutes so it can firm up.
5. Slice and serve
Cut the Mississippi Mud Cake into individual portions and serve.
