Crock Pot Chicken and Dumplings

Ingredients

  • 1 onion, diced
  • 6 boneless, skinless chicken thighs
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon poultry seasoning
  • 2 cups chicken broth
  • 1 can refrigerated buttermilk biscuits
  • 2 cups frozen mixed vegetables, thawed
  • Black pepper, to taste

Directions

1. Add the onion

Spread the diced onion evenly across the bottom of the slow cooker.

2. Add the chicken

Arrange the chicken thighs over the onion in a single layer.

3. Prepare the creamy sauce

In a medium bowl, combine the cream of chicken soup and cream of celery soup.

Stir in the poultry seasoning, chopped parsley, and black pepper to taste.

Mix until smooth.

4. Pour over the chicken

Spread the creamy soup mixture evenly over the chicken thighs.

Pour the chicken broth over everything.

5. Slow cook

Cover the slow cooker and cook on HIGH for 5 hours.

Try to avoid lifting the lid during the first several hours so the slow cooker maintains its heat.

6. Add the vegetables

When about 1 hour of cooking time remains, add the thawed mixed vegetables.

7. Prepare the dumplings

Open the can of refrigerated biscuits.

Flatten each biscuit slightly, then cut each one into about 4 strips or pieces.

8. Add the biscuit dough

Arrange the biscuit pieces over the top of the chicken mixture in an even layer.

Cover the slow cooker again.

9. Finish cooking

Continue cooking on HIGH for the remaining 1 hour, or until the biscuit dough is cooked through and has formed soft, tender dumplings.

Gently stir before serving if you prefer the dumplings mixed throughout the creamy chicken filling.

10. Serve

Spoon the chicken and dumplings into bowls and garnish with additional chopped parsley if desired.
