Ingredients

  • 8 slices thick-cut bacon, raw
  • 4 medium russet or Yukon Gold potatoes, scrubbed and cut into 1-inch chunks
  • 1 large yellow onion, sliced
  • 2 cans Great Northern or cannellini beans, 15 ounces each, drained and rinsed
  • 1 1/2 cups low-sodium chicken broth

Directions

1. Add the bacon

Arrange the raw bacon slices in a single layer across the bottom of a 5- to 6-quart slow cooker.

2. Add the onion

Spread the sliced onion evenly over the bacon.

3. Add the potatoes

Place the potato chunks over the onions in an even layer.

Do not stir.

4. Add the beans

Scatter the drained and rinsed beans over the potatoes.

Keep the layers mostly intact.

5. Pour in the broth

Slowly pour the chicken broth over everything.

6. Slow cook

Cover and cook on:
