Ingredients

For the Hamburger Steaks

  • 1 1/2 pounds ground beef, preferably 80–85% lean
  • 1/2 cup plain breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1/2 small onion, finely minced, about 1/4 cup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon Worcestershire sauce, optional

For the Mushroom Gravy

  • 2 cans cream of mushroom soup, 10.5 ounces each
  • 1 1/2 cups milk
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt

For the Pan

  • 1 tablespoon butter or cooking spray

Optional Garnish

  • 2 tablespoons fresh parsley, chopped

Directions

1. Preheat the oven

Preheat your oven to 375°F (190°C).

Lightly grease a large rimmed baking sheet or shallow baking pan.

2. Prepare the beef mixture

In a large bowl, combine the ground beef, breadcrumbs, 1/4 cup milk, egg, minced onion, salt, black pepper, garlic powder, onion powder, and Worcestershire sauce if using.

Mix gently until just combined.

Avoid overmixing so the patties stay tender.

3. Shape the patties

Divide the mixture into 6 equal portions.

Shape each portion into a thick oval patty, about 3/4 inch thick.

Arrange the patties on the prepared baking sheet.

4. Make the mushroom gravy

In a medium bowl, whisk together the cream of mushroom soup, 1 1/2 cups milk, black pepper, and salt until smooth.

5. Cover the patties with gravy

Spoon or ladle the mushroom mixture evenly over the hamburger steaks.

Allow the extra gravy to collect around the patties.

6. Bake

Bake for 30 to 35 minutes, or until the patties are cooked through and reach an internal temperature of 160°F (71°C).

The gravy should be hot and bubbling around the edges.

7. Broil if desired

For a little extra browning on top, broil the patties for 2 to 3 minutes at the end.

Watch closely so they do not burn.

8. Rest and serve

Let the hamburger steaks rest for about 5 minutes.

Spoon extra mushroom gravy over each serving and garnish with fresh parsley if desired.
