Ingredients

  • 3 large russet potatoes, peeled
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon salt

Directions

1. Preheat the oven

Preheat your oven to 375°F (190°C).

Generously brush a 12-cup muffin tin with some of the melted butter.

2. Slice the potatoes

Cut the potatoes into very thin slices, about 1/8 inch thick.

The slices should be thin enough to bend easily and fit along the sides of the muffin cups.

3. Season the potatoes

Place the potato slices in a large bowl.

Pour the remaining melted butter over them and sprinkle with salt.

Toss gently until the slices are evenly coated.

4. Form the cups

Arrange overlapping potato slices inside each muffin cup.

Press them firmly against the bottom and sides to create a cup-like shape.

5. Bake

Bake for 30 to 35 minutes, or until the edges are golden and crisp and the potatoes are tender in the center.

6. Rest and serve

Let the potato cups rest in the pan for about 5 minutes.

Carefully loosen and lift them out with a small spatula or butter knife.

Serve warm.

For extra flavor, top with sour cream, chives, shredded cheese, or your favorite herb dip.
