This easy Slow Cooker Cheesy Potato Casserole is a creamy, cheesy side dish that requires minimal preparation. Frozen shoestring potatoes, crispy bacon, cheddar cheese, and creamy soup come together for a warm and satisfying dish that’s ideal for gatherings, potlucks, and casual family meals.

Ingredients

  • 1 bag (28–32 ounces) frozen shoestring potatoes
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 2 cups shredded cheddar cheese, divided
  • 1 cup cooked bacon pieces

Directions

  1. Prepare the slow cooker: Lightly grease the inside of the slow cooker with nonstick cooking spray or a little oil.
  2. Combine the ingredients: Add the frozen potatoes, cream of chicken soup, 1½ cups of shredded cheddar, and cooked bacon. Stir gently until everything is evenly mixed and coated.
  3. Cook: Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours, until the potatoes are tender and the casserole is hot and bubbling. Stir once halfway through cooking if desired.
  4. Add the final cheese: Sprinkle the remaining ½ cup of cheddar over the casserole. Cover and cook for another 10–15 minutes, or until the cheese has completely melted.
  5. Serve: Serve warm directly from the slow cooker and enjoy.
