This satisfying ground beef and potato casserole is the ultimate comfort dish. Creamy mushroom soup and gooey melted cheese add richness, while tender slices of potato create a hearty base perfect for cozy family dinners.

Instructions
- Preheat the Oven
Heat your oven to 375°F (190°C). - Sauté Onion and Garlic
Warm the olive oil in a skillet over medium heat. Add chopped onion and cook for about 5 minutes until soft. Stir in minced garlic and cook for 1 more minute. - Brown the Beef
Add the ground beef and cook until fully browned, breaking it up as it cooks. Drain off any extra fat. - Season the Mixture
Stir in salt, pepper, and dried thyme. Adjust seasonings to your preference. - Assemble the Casserole
Lightly grease a baking dish. Layer half the sliced potatoes on the bottom, followed by half of the beef mixture. Repeat with remaining potatoes and beef. - Mix the Sauce
In a bowl, whisk together the cream of mushroom soup and milk until smooth and well blended. - Add the Sauce
Pour the soup mixture evenly over the layered ingredients in the baking dish. - Bake the Dish
Cover the dish with foil and bake for 45 minutes. Then remove the foil, sprinkle the shredded cheddar cheese on top, and bake uncovered for another 15 minutes, or until the cheese is melted and golden. - Cool and Serve
