Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 large egg, beaten
  • 1/2 cup breadcrumbs
  • 1 large onion, grated
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 1/2 cups egg noodles
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 pint heavy cream
  • 1 1/2 cups grated Swiss cheese
  • Fresh parsley, chopped, for garnish

Step-by-Step Instructions

Step 1: Prepare the oven and baking dish.

Preheat your oven to 375°F (190°C). Lightly coat a 9 × 13-inch baking dish with nonstick cooking spray and set aside.

Step 2: Mix and shape the meatballs.

In a large bowl, combine the ground beef, beaten egg, breadcrumbs, grated onion, garlic powder, ground nutmeg, salt, and black pepper. Mix gently until all the ingredients are incorporated. Shape the mixture into small meatballs, using approximately 1 1/2 tablespoons per meatball.

Step 3: Brown the meatballs.

Heat the olive oil in a large skillet over medium-high heat. Add the meatballs in batches if necessary and brown them on all sides. They do not need to be fully cooked at this stage. Transfer the browned meatballs to a plate.

Step 4: Cook the egg noodles.

Bring a large pot of salted water to a boil. Add the egg noodles and cook for about 2 minutes less than the package directions recommend. Drain well and set aside.

Step 5: Prepare the creamy sauce.

Using the same skillet, pour in the beef broth, heavy cream, and Worcestershire sauce. Stir well, scraping up the flavorful browned bits from the bottom of the pan. Allow the sauce to simmer gently for approximately 10 minutes, stirring occasionally, until it begins to thicken. Taste and adjust the seasoning with additional salt and pepper if needed.

Step 6: Assemble the casserole.

Spread the drained egg noodles evenly in the prepared baking dish. Arrange the browned meatballs over the noodles, then pour the creamy beef sauce over everything, making sure the noodles are well coated.

Step 7: Add the cheese and bake.

Sprinkle the grated Swiss cheese evenly across the top. Place the casserole in the preheated oven and bake for about 20 minutes, or until the cheese is melted and golden, the sauce is bubbling, and the meatballs are cooked through.

Step 8: Rest and serve.

Remove the casserole from the oven and let it rest for 5 minutes before serving. Finish with freshly chopped parsley for a touch of color and freshness. Serve warm and enjoy this creamy, cheesy Swedish meatball bake.
