Beef Patties in Beef Broth

Hearty Beef Patties in Savory Beef Broth

These comforting beef patties simmer in a rich, flavorful broth alongside carrots, celery, and tender potatoes. Browning the patties first adds extra depth and flavor, while the gentle simmer allows the meat and vegetables to soak up the savory broth. This satisfying one-pan meal is perfect for a cozy family dinner on a chilly evening.

Ingredients

For the Beef Patties

  • 1 pound ground beef (80/20 blend)
  • ½ cup seasoned breadcrumbs
  • ¼ cup finely chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried parsley (optional)

For the Broth and Vegetables

  • 1 tablespoon olive oil
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium potato, diced
  • 4 cups beef broth
  • 1 bay leaf
  • Salt and black pepper, to taste

Step-by-Step Instructions

1. Prepare the beef mixture

In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, Worcestershire sauce, salt, black pepper, and dried parsley, if desired. Mix gently until everything is evenly distributed without overworking the meat.

2. Shape the patties

Divide the mixture into four equal portions and shape each one into a patty about ½ inch thick. Press a small indentation into the center of each patty to help it maintain its shape during cooking.

3. Sear the patties

Heat the olive oil in a large skillet over medium heat. Add the patties and cook for 4–5 minutes per side, until nicely browned. Transfer them to a plate and set aside.

4. Cook the vegetables

Using the same skillet, add the sliced carrots, celery, and diced potato. Sauté for 3–4 minutes, stirring occasionally, to begin softening the vegetables and pick up the flavorful browned bits left behind by the beef.

5. Make the broth

Pour in the beef broth and scrape the bottom of the skillet to release any remaining browned bits. Add the bay leaf and season with additional salt and black pepper to taste.

6. Simmer everything together

Return the browned beef patties to the skillet, nestling them among the vegetables. Cover and simmer over low heat for 20–25 minutes, until the vegetables are tender and the patties are cooked through. Ground beef should reach an internal temperature of 160°F (71°C).

7. Serve and enjoy

Remove the bay leaf before serving. Ladle the hot broth, vegetables, and beef patties into deep bowls. Serve immediately for a warm, hearty meal packed with savory flavor.
