Homemade Crunch Bars
These Homemade Crunch Bars are an easy, delicious treat made with simple pantry ingredients. Crispy rice cereal is coated in a rich mixture of melted chocolate, creamy peanut butter, maple syrup, and coconut oil to create perfectly crunchy bars with a smooth, chocolatey finish. No baking is required, and they’re perfect for satisfying your sweet tooth whenever a chocolate craving strikes.
Ingredients
The Crunch
- 3 cups crispy rice cereal
The Chocolate Fudge Base
- 1½ cups chocolate chips
- 1 cup peanut butter (or your favorite nut or seed butter)
- ½ cup maple syrup
- ¼ cup coconut oil (or butter)
Instructions
Step 1: Prepare the Pan
Line an 8×8-inch baking dish with parchment paper, leaving some extra paper hanging over the edges. This will make removing the bars much easier once they’re set.
Step 2: Prepare the Cereal
Add the crispy rice cereal to a large mixing bowl and set aside.
Step 3: Melt the Chocolate Mixture
In a microwave-safe bowl or small saucepan, combine the chocolate chips, peanut butter, maple syrup, and coconut oil. Heat gently, stirring frequently, until everything is completely melted and smooth. Mix until glossy and well combined.
Step 4: Combine Everything
Pour the melted chocolate mixture over the crispy rice cereal. Gently fold with a spatula until all the cereal is evenly coated.
Step 5: Press and Refrigerate
Transfer the mixture to the prepared baking dish. Spread evenly and press firmly into the pan using the back of a spoon or a piece of parchment paper. Refrigerate for at least 1 hour, or until completely firm.
Step 6: Slice and Serve
Lift the mixture out of the pan using the parchment paper. Cut into squares or bars and enjoy!
Storage Tips
- Store the bars in an airtight container in the refrigerator for up to 1 week.
- Keep them chilled to maintain their firm texture and satisfying crunch.
- For longer storage, freeze in an airtight container for up to 2 months.
