Stacked with crisp veggies, savory eggs, and sharp Irish cheese, all brought together with a zesty homemade dressing, it’s a colorful and satisfying dish that pleases both the eyes and the palate.


Ingredients:

Dressing:

Instructions:

  1. Make the Dressing:
    In a small bowl, combine the mayonnaise, sweet relish, spicy mustard, dried thyme, and salt. Stir until smooth and creamy. Set aside.
  2. Layer the Ingredients:
    Use a clear glass bowl to show off each colorful layer. Arrange the ingredients in this order:
    • First: Iceberg lettuce at the base.
    • Second: Finely diced red onion.
    • Third: Chopped hard-boiled eggs.
    • Fourth: Diced sweet peppers.
    • Fifth: Thawed peas, spread evenly.
    • Sixth: Irish cheese, generously layered on top.
  3. Add the Dressing:
    Spoon the dressing evenly over the final layer. Gently spread it with a spatula to fully cover the top surface.
  4. Chill (Optional):
    Cover and refrigerate for 1–2 hours if possible. This allows the flavors to develop and the dressing to slightly soak into the top layers.
  5. Serve:
    Keep the layers intact until ready to serve. Toss gently before serving to coat everything in the dressing, or serve as-is and let guests scoop into the layers.
