These flaky puff pastry snacks make the perfect appetizer or party bite. Easily customizable, they’re delicious with a range of fillings—from a classic cheese-and-herb mix to more unique combinations like eggplant and feta.
Ingredients:

| Finely diced ham | As needed |
| Roasted eggplant, chopped | As needed |
| Crumbled feta | As needed |
| Salt | A pinch |
| Additional seasonings (to taste) | As desired |
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
- Unfold the puff pastry onto a lightly floured work surface.
- Slice into small squares or rectangles, depending on your preferred shape.
- Add a small spoonful of your chosen filling to the center of each piece.
- Fold the pastry over the filling to create a sealed triangle or rectangle. Press the edges together to ensure they’re closed.
- Lightly brush the tops with the beaten egg for a golden finish.
- Arrange the filled pastries on the baking sheet.
- Bake for 15–20 minutes, or until puffed and nicely browned.
- Allow them to cool slightly before serving warm.
