Instructions:
- Preheat Oven: Set your oven to 325°F (165°C).
- Dry and Season: Pat the roast dry using paper towels. In a small bowl, mix garlic powder, onion powder, thyme, paprika (if using), salt, and pepper. Rub this seasoning mixture evenly over the entire surface of the roast.
- Sear for Flavor: Heat olive oil or butter in a Dutch oven or heavy skillet. Sear the roast on all sides—3 to 4 minutes per side—until it forms a golden crust. This locks in moisture and deepens flavor.
- Wrap in Bacon: Lay bacon strips out on a cutting board, slightly overlapping. Place the seared roast on top and wrap the bacon around it. Tuck in the ends or tie with kitchen twine if needed.
