Hearty Slow Cooker Beef & Noodles
This comforting slow cooker dish features tender chunks of beef simmered all day in a savory broth, then finished with hearty egg noodles and a touch of thickening to create a rich, stew-like meal. It’s cozy, filling, and practically cooks itself—ideal for busy weekdays or slow Sundays.
Ingredients:
- Beef stew meat or chuck roast – 2 lbs
- Onion, finely chopped – 1
- Garlic, minced – 3 cloves
- Beef broth – 4 cups
- Salt – 1 tsp
- Black pepper – ½ tsp
- Dried thyme – 1 tsp
- Dried rosemary – 1 tsp
- Bay leaf – 1
- Egg noodles – 3 cups
- Flour – ¼ cup
- Water – ¼ cup
- Worcestershire sauce – 1 tbsp
Instructions:
1. Sear the Meat (Optional):
For deeper flavor, brown the beef on all sides in a skillet over medium heat. Once seared, transfer it to your slow cooker.
2. Set It & Forget It:
Add onion, garlic, beef broth, salt, pepper, thyme, rosemary, and bay leaf to the slow cooker. Cover and cook on LOW for 7–8 hours, or until the beef is tender enough to shred easily.
3. Add Noodles & Thicken:
Roughly 30 minutes before serving, remove the bay leaf and stir in the egg noodles.
4. Make the Slurry:
In a small bowl, whisk together flour and water until smooth. Stir the mixture into the slow cooker along with Worcestershire sauce.
5. Final Simmer:
Cover and cook for another 30 minutes, or until the noodles are soft and the sauce has thickened to a hearty consistency.
6. Serve & Enjoy:
Ladle into bowls and serve warm. It’s everything you want in a one-pot comfort meal—simple, savory, and soul-soothing.
