4 cups water (or use half water and half milk for a creamier texture)
1 cup quick-cooking or regular grits (not instant)
1 cup shredded sharp cheddar cheese
2 tablespoons butter
Salt, to taste (optional but recommended)

Warm the liquid
In a medium saucepan, bring the water (or water and milk mixture) to a gentle boil over medium-high heat.
Stir in the grits
Gradually whisk in the grits, stirring continuously to prevent lumps. Reduce heat to a low simmer.
Cook until creamy
Stir frequently as the grits thicken and become smooth. Quick grits will take about 5–7 minutes, while regular grits may need 15–20 minutes. Add a splash of water or milk if they become too thick.
Add butter and cheese
Take the saucepan off the heat. Stir in the butter until melted, then mix in the cheddar cheese until fully melted and creamy.
Season and serve
Taste and add salt if needed. Serve warm. If the grits thicken as they sit, stir in a little warm liquid to loosen them before serving.
