Classic 7UP Pound Cake
This timeless pound cake gets its signature soft, velvety texture from lemon-lime soda, delivering a subtly sweet citrus flavor. Moist and rich, it’s ideal on its own or paired with a simple glaze or fresh fruit.

Instructions

Step 1: Preheat and Prepare the Pan
Set your oven to 325°F (160°C). Grease and flour a 10-inch bundt pan to prevent sticking.

Step 2: Cream Butter and Sugar
In a large bowl, beat the butter and sugar together until the mixture is pale, smooth, and fluffy.

Step 3: Add Eggs and Flavorings
Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla and either almond or lemon extract.

Step 4: Mix in Dry Ingredients and Soda
Add the flour in portions, alternating with the lemon-lime soda. Begin and end with the flour. Mix gently—just until the batter comes together.

Step 5: Bake the Cake
Transfer the batter into your prepared bundt pan. Bake for 60 to 70 minutes, or until a toothpick inserted in the center comes out clean.

Step 6: Cool and Serve
Let the cake cool in the pan for about 10 minutes before turning it out onto a wire rack to finish cooling. Serve plain, dusted with powdered sugar, or topped with whipped cream and fresh berries.
