Amish Winter Bliss Casserole

I first discovered this dish at a charming Amish market during a weekend escape, and it’s been a beloved staple in our home ever since. Perfect for busy weeknights, it’s a one-pan wonder that delivers big on flavor with minimal cleanup.

 Ingredients

Green beans, trimmed & cut1 cup
Corn kernels (fresh/frozen)1 cup
Diced tomatoes (undrained)1 can (14.5 oz)
Beef broth1 cup
Salt1 teaspoon
Black pepper½ teaspoon
Dried thyme1 teaspoon
Shredded cheddar cheese1 cup
Cooked egg noodles2 cups

 Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef. Drain any excess fat.
  3. Add the chopped onion and garlic, sautéing until the onion turns translucent.
  4. Stir in the carrots, green beans, and corn. Cook for about 5 minutes until they begin to soften.
  5. Pour in the diced tomatoes (with juice), beef broth, salt, pepper, and thyme. Simmer for 10 minutes.
  6. Fold in the cooked egg noodles and half of the shredded cheddar cheese.
  7. Transfer the mixture to a greased 9×13-inch baking dish.
  8. Sprinkle the remaining cheese over the top.
  9. Bake for 25–30 minutes, until the cheese is melted and golden.
  10. Let cool slightly before serving.
