This timeless apple pie recipe features a luscious filling of sweet, spiced apples enhanced with a hint of lime for a subtle citrus twist—all wrapped in a buttery, flaky crust. Baking it until the filling bubbles ensures the apples are perfectly tender and full of flavor.

Instructions

Step 1: Prepare the Crust

Preheat your oven to 375°F (190°C). If you’re using ready-made crusts, let them soften at room temperature according to package directions. Line a 9-inch pie pan with one of the crusts, pressing it gently into place.

Step 2: Make the Apple Filling

Peel, core, and slice the apples into 1/4-inch slices. In a large mixing bowl, toss them with lime juice, brown sugar, cinnamon, nutmeg, salt, and cornstarch or flour. Stir gently until all the slices are evenly coated with the spice mixture.

Step 3: Assemble the Pie

Spoon the apple mixture into the prepared bottom crust, piling it slightly higher in the center. Place the second crust over the top. Trim away any excess dough, seal the edges by pinching or crimping with a fork, and cut a few slits into the top crust to let steam escape during baking.

Step 4 (Optional): Apply Egg Wash

For a beautifully golden and shiny crust, whisk the egg yolk with a teaspoon of water. Brush this egg wash over the top crust and sprinkle with granulated sugar if desired.

Step 5: Bake

Step 6: Cool and Serve
