Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts
- 8 slices bacon
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon garlic powder
For the Filling
- 4 oz cream cheese, softened
- ½ cup shredded mozzarella or cheddar
- 1 cup fresh spinach, finely chopped
- 2 tablespoons bacon bits (optional)
- 1 teaspoon Italian seasoning
- 1 tablespoon fresh parsley, chopped (optional)
Instructions
Preheat Oven
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
Make the Filling
- In a bowl, combine the cream cheese, shredded cheese, spinach, bacon bits, Italian seasoning, and parsley until smooth and well mixed.
Prepare the Chicken
- Slice a pocket into the side of each chicken breast, being careful not to cut all the way through. Rub each piece with olive oil, then season with salt, pepper, paprika, and garlic powder.
Stuff and Wrap
- Spoon the filling into each chicken breast. Wrap each one with two slices of bacon, securing with toothpicks if needed.
Bake
- Arrange the chicken seam-side down in the baking dish. Bake uncovered for 30–35 minutes, until the chicken is fully cooked (165°F / 74°C) and the bacon is crisp.
Optional Finish
- For extra crispiness, broil for 2–3 minutes at the end.
Rest and Serve
- Let the chicken rest for about 5 minutes before serving.
