Instructions

Step 1: Make the Mixture
Chop the chicken breast into small, even pieces and transfer to a large bowl. Add mozzarella, Parmesan, eggs, mayonnaise, flour, garlic powder, onion powder, paprika, salt, pepper, and parsley. Stir everything together until fully mixed.

Step 2: Shape & Fry
In a large skillet, heat olive oil over medium heat. Scoop roughly 2 tablespoons of the chicken mixture and shape it into a small patty or fritter. Carefully place into the skillet. Continue forming and adding fritters in batches, making sure not to overcrowd the pan.

Step 3: Cook Until Golden
Cook each fritter for 3 to 4 minutes on each side, or until golden brown and cooked through. Ensure the internal temperature reaches 165°F (74°C) for food safety.

Step 4: Drain & Serve
Transfer the cooked fritters to a paper towel-lined plate to remove excess oil. Serve them hot with your favorite dipping sauce—ranch, garlic aioli, or spicy mayo all pair well.
