These Baked Bacon, Egg, and Cheese Pinwheels are a simple yet satisfying choice for breakfast or brunch. Buttery, flaky puff pastry is rolled around a flavorful filling of soft scrambled eggs, crispy bacon, and melted cheese, creating bite-sized snacks that are always a hit.

Ingredients

  • 1 sheet puff pastry, thawed
  • 4 slices bacon, cooked and crumbled
  • 3 large eggs, scrambled
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon milk
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon chopped chives (optional)
  • 1 egg, beaten (for egg wash)

Instructions

1. Preheat the oven
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Roll out the pastry
On a lightly floured surface, gently roll out the thawed puff pastry to remove any folds or creases.

3. Prepare the egg mixture
In a bowl, mix the scrambled eggs with the milk, salt, and pepper until well combined.

4. Assemble the pinwheels
Spread the egg mixture evenly over the pastry, leaving a small border around the edges.
Sprinkle the crumbled bacon and shredded cheddar over the top.
Starting from a long edge, roll the pastry tightly into a log.
Slice into 1-inch pieces and place them on the prepared baking sheet.

5. Add the egg wash
Brush the tops with the beaten egg to help them turn golden as they bake.

6. Bake
Bake for 15–20 minutes, or until the pastry is puffed and golden brown.

7. Cool and serve
Let the pinwheels cool slightly before serving. Garnish with chopped chives if desired.
