Clodhopper Candy is a quick and simple no-bake confection that blends crunchy graham crackers and salty cashews, all coated in a luscious layer of creamy white chocolate.


Ingredients

White chocolate chips12 oz

Directions

Step 1: Prepare the Pan
Line a baking sheet with parchment paper and set it aside. This helps prevent sticking and makes cleanup simple later.

Step 2: Melt the Chocolate
Place the white chocolate chips in a large, microwave-safe bowl. Heat them in 30-second intervals, stirring well between each, until the chocolate is smooth and fully melted. Be careful not to overheat, as white chocolate can easily seize or turn grainy.

Step 3: Mix Everything Together
Add the crushed graham crackers and chopped cashews to the melted chocolate. Stir until every piece is evenly coated. If using cinnamon, mix it in at this stage for a warm, spiced touch.

Step 4: Spread and Set
Transfer the mixture to the prepared parchment-lined baking sheet. Spread it out evenly into a thin layer using a spatula. Let it cool completely—this can take a couple of hours at room temperature or about 30–45 minutes in the refrigerator.

Step 5: Break Into Pieces and Store
Once the candy is firm and set, break it into bite-sized chunks by hand or with a knife. Store your Clodhopper Candy in an airtight container or resealable bag to keep it crisp and fresh.
