🧁 Instructions

1. Prep Oven & Pan
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.

2. Mix the Batter
In a large mixing bowl, sift together cake flour, baking powder, salt, and sugar.
Add the softened butter in small chunks and mix until the mixture is crumbly.
Blend in the egg whites one at a time, followed by the whole egg.
Pour in the cream, vanilla, and coconut extract. Beat until the batter is light and smooth—about 1–2 minutes.

3. Bake the Cake
Pour the batter into the prepared pan and bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

4. Soak with Coconut Milk
While the cake is still warm, use a fork or skewer to poke small holes across the surface. Shake the can of coconut milk well and pour it evenly over the cake. Let it cool completely so the milk soaks in.

5. Whip the Topping
In a bowl, beat the softened cream cheese until smooth.
Add the sugar, vanilla, and coconut extract, mixing until combined.
Gradually pour in the chilled cream and beat until soft peaks form, then continue until stiff and fluffy (3–4 minutes total).

6. Assemble the Cake
Spread the whipped topping evenly over the cooled, soaked cake. Sprinkle with shredded coconut for texture and flavor.

7. Chill & Serve
