Crinkle Tortilla Casserole
Ingredients:
Ingredient | Quantity |
---|---|
Flour tortillas | 14 to 16 |
Thinly sliced ham | 10 to 12 slices |
Cooked, drained spinach | 1 cup |
Large eggs (beaten) | 2 |
Whole milk | 1 cup |
Shredded mozzarella | 1 cup |
Kosher salt | To taste |

Instructions:
- Preheat & Prep: Set your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
- Shape the Tortillas: Fold each tortilla into a wavy, accordion-style shape. Place them upright and snugly next to each other in the prepared dish.
- Add Fillings: Nestle the ham slices and spinach into the folds and spaces between the tortillas, spacing them evenly for every bite to be balanced.
- Mix Custard: In a mixing bowl, whisk together the eggs and milk. Season with salt and pepper to your taste.
- Assemble: Pour the egg mixture evenly over the tortillas, letting it flow between and beneath the folds. Sprinkle the top with mozzarella cheese.
- Bake: Place the dish in the oven and bake uncovered for 18–20 minutes, or until the cheese is melted, the custard is set, and the top is lightly browned.
- Serve: Let cool for a few minutes before serving warm. Perfect for brunch or a light dinner.
