Soft flour tortillas are folded and tucked into a dish with savory ham and tender spinach, then drenched in a creamy egg custard and finished with melty cheese. Crinkle Tortilla Casserole

Ingredients:

Shredded mozzarella1 cup

Instructions:

  1. Preheat & Prep: Set your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish.
  2. Shape the Tortillas: Fold each tortilla into a wavy, accordion-style shape. Place them upright and snugly next to each other in the prepared dish.
  3. Add Fillings: Nestle the ham slices and spinach into the folds and spaces between the tortillas, spacing them evenly for every bite to be balanced.
  4. Mix Custard: In a mixing bowl, whisk together the eggs and milk. Season with salt and pepper to your taste.
  5. Assemble: Pour the egg mixture evenly over the tortillas, letting it flow between and beneath the folds. Sprinkle the top with mozzarella cheese.
  6. Bake: Place the dish in the oven and bake uncovered for 18–20 minutes, or until the cheese is melted, the custard is set, and the top is lightly browned.
  7. Serve: Let cool for a few minutes before serving warm. Perfect for brunch or a light dinner.
